I was absolutely loving it when I read that an overwhelming amount of recipes in Marcella Harzan's cookbook, Essentials of Italian Cooking, involved canned tuna as well. And here we are talking about one of the most authentic and touted Italian cookbooks here. While this recipe for avocado tuna tostadas isn't Italian, I'm just letting you know so that you can start getting out of the mindset that canned tuna sucks. It doesn't.
This recipe is here to get you started on your love of canned tuna. When you combine with avocado, you get your yummy fats, and then the tostada gives you a crunch. It's a win all around. Start thinking of it as a cheaper alternative to ceviche and one that you can take out camping without worrying about refrigeration.

Avocado Tuna Tostadas
Ingredients
Serves: 2
Prep time: 15 minutes
For the Tostadas:
4 tostada shells (you can buy these pre-made or make your own by frying or baking corn tortillas until they're crispy)
2 cans (5 ounces each) of tuna in water, drained
1/2 red onion, finely diced
1/2 red bell pepper, finely diced
1/2 cup chopped fresh cilantro
Juice of 1 lime
Salt and pepper to taste
For the Avocado Topping:
1 ripe avocado, peeled, pitted, and mashed
1/4 cup diced tomatoes
1/4 cup diced red onion
Juice of 1 lime
Salt and pepper to taste
Optional Toppings:
Sour cream or Greek yogurt
Sliced jalapeños (if you like it spicy)
Salsa or hot sauce
Shredded lettuce or cabbage
Crumbled queso fresco or feta cheese
Directions
1. Prepare the Tuna Salad:
In a small bowl, combine the drained tuna, finely diced red onion, finely diced red bell pepper, chopped cilantro, and the juice of 2 limes. Mix well to combine. Season with salt and pepper to taste.
2. Assemble the Tostadas:
Lay out the tostada shells on a serving platter.
Spoon the tuna salad mixture on top of the avocado layer. Spread it out evenly.
