You will melt as sultry as the cheese you put on this Leek and Sausage Breakfast Sandwich.
Little bit of EGG, little bit of CHEESE, little bit of LEEK, least we forget our SAUSAGE? It's called the Leek and Sausage Breakfast Sandwich, and get used to hearing those words, because they're the only ones you and your friends will be mentioning the rest of your trip. You and everyone in your camp will lose it when you have one of these shoved in your face first thing after a long night around the campfire.

I don't care if it's bagels, focaccia, sourdough, or english muffins - make sure you got a good bread base. Wonderbread is for PB and J's of your childhood, this is a Leek and Sausage Breakfast Sammie and is for ADULTS (just kidding, kids will prob like it too, just leave off the leeks) so use adult bread.
Highly recommend coming prepped with your fave condi's: Kewpie mayo, siracha, salsa huichol, spicy dijon, etc.. A breakfast sammie wants condiments (they whispered it to me when they looked lovingly into my campfire-smoke-crusted eyes).
Leek and Sausage Breakfast Sandwich
Serves: 2
Prep and cook: 25 minutes
Ingredients
2 bagels (or whatever kind of dough you're going for)
1 sausage, cut in half down the middle, then cut in half again (see pic in pan)
1/4 cup leek, half-moon cut
2 Tbsp onion, diced
2 eggs
2 slices of cheese (cheddar, swiss, you name it)
Optional condiments: mayo, dijon, siracha (I used mayo and siracha)
Salt and pepper
Bit of butter for frying
Directions
Heat a cast iron skillet over medium-high heat and add some butter or oil.
Once your oil or butter is hot, add your two sausage halves to your pan, inner sides down to sear on the pan, and move over towards the pan edges. Place your leeks and onions in the pan as well and toss around in the oil. Salt and pepper your veggies. Cook everything in the pan for 3 minutes, stir your veggies occasionally. After 3 minutes, flip your sausage to the other side for another 3 minutes. Continue to stir your veggies.
Once the veggies and sausage looks nice and toasty, the onions and leeks have caramelized quite a bit and there's a good char on the sausage, remove from your skillet onto a plate and cover with foil to keep warm.
Add a little more butter to your pan. Once butter is hot and melted, add your bread to the skillet, cut side down to pan fry. Only do the inner side of the bread for now, since you'll grill the sammie once assembled.
Remove the bread once toasted to another plate and cover to keep warm. Add more butter back to the pan and melt. Crack your two eggs into the pan and start to fry.
While your eggs are frying, start to assemble the breakfast sammies. On one piece of bread, add your condiments, sausage, leek/onion mix. Once the fried eggs are done (a little under from how done you normally like them, as they'll cook a little longer once in the sammie), add them as well and top with your cheese. Sandwich it with your other piece of bread.
Add a little more butter in the pan and gently place in your breakfast sammies to extra toast up and get your cheese all melty. Fry for a minute or two on one side and then flip to the other and cook for about a minute more. Remove from heat.
Dish out on to a few plates and viola! Leek and Sausage Breakfast Sammies are ready to eat.
