Yuuurrmy stovetop frittata, or can be made over a fire, made with veggies. Can always throw in the bacon and you'll have yourself a party (or at least a breakfast that would be great to serve to a brunch).

Traditional frittata? Goes from stovetop to oven. This one? Strictly stovetop. So easy you'll be saying "Frittata? Why, I gotta!" Please don't say that. Instead maybe, "frittata? Let's add some mushrooms, cheese, spinach, yada, yada".....maybe just refrain from any frittata rhymes.
"Refrain from any frittata rhymes" - Me, begging you.
Alright, if we didn't know already, a frittata is like a crustless quiche. A wonderous egg pie, filled with all your favorite little veggies, meats and cheeses that you had no idea how you were ever going to eat it all up. It's delicious, MADE for brunching, and makes you look way fancier than you really are.
Feel free to eat this whole pan by yourself or invite over your favorite little campers for a slice.
Stovetop Frittata
Ingredients
Serves: 2-4; Prep time: 5 minutes, Cook time: 15 minutes
4 eggs
2 Tbsp. milk (any kind)
Salt and pepper
1/2 small onion
1/2 c. chopped mushrooms (baby bella, white, etc.)
1 1/2 c. chopped kale
1/4 c. crumbled goat cheese (or feta, grated swiss..)
1/4 tsp. red pepper flakes
Olive oil
Optional* fresh herbs (or Italian seasoning goes a long way)
Other potential additions: cooked bacon, cooked breakfast sausage, soyrizo
Directions
Cook up any bacon/sausage/soyrizo if using. Set aside.
Chop up your veggies and set aside.
Crack your eggs into a bowl, add your milk, season with salt and pepper, and whisk with a fork until well mixed. Set aside.
Place a 8 or 9 in cast iron (or a non-stick pan with a lid) over medium heat and add a tablespoon of olive oil.
Once oil is heated, add your onion to the pan and sauté until softened, about 2-3 minutes.
Add in the mushrooms and kale to the same pan and cook for another 3 minutes. Season with a bit of salt and pepper. Cook for another minute and then add your red pepper flakes.
If adding, mix/stir in in your pre-cooked bacon, sausage, or soyrizo.
Lower your heat to as low as you can go.
Add your fresh herbs to the egg mix, if using, and give the egg mixture another whisking until they're frothy - pour over the veggies. Use a spatula to evenly distribute over the veggies and around the pan.
Cover with a lid and cook over low for about 5-6 minutes, or until the eggs are set. Remove from heat.
Slice and SERVE UP THAT STOVETOP FRITTAT'.
Man, this eggy pie goes well with a light green salad or some fresh fruit. Maybe even some avo toast, bagels with cream cheese, you name it - it probably pairs well with this.
