You honestly will never want another topper for your sweet potatoes in your life once you've had this tahini-butter. Sweet potatoes are the perfect candidate for SLATHERING this delicious buttery mix on - sweet, spiced, creamy and then you add your savory little elevated schmear? My god. Food for angels.


It is also vital that you cook your sweet potato in a steam-like method, like foil-packeting, that gives you a soft and creamy sweet potato. Why? Because that method in combo with the tahini mixture turns to a buttery cloud in your mouth, that's why.


So, if you like sweet and salty butter clouds, read on.


Foil Packet Sweet Potatoes with Tahini-Butter

Serves 2

Prep Time: 5 minutes

Cook Time: 30 minutes


Ingredients

  • 2 medium/large sweet potatoes

  • Olive Oil

  • 1 teaspoon cinnamon

  • Salt/pepper

  • Optional* furikake seasoning

For the Tahini-Butter

  • 3 tablespoons unsalted room-temp butter

  • 2 tablespoons tablespoons tahini paste

  • 1 tablespoon soy sauce

  • 1 tablespoon lime juice

  • 1/4 teaspoon chili powder

  • Salt

Directions

Disclaimer: Alright. You can cook this a few different ways (I'll go into with a fire or an oven), though it will more or less the be same. Obviously the fire is a little more variable so your cook times may differ slightly depending on where you put your potatoes. Try to maintain over hot coals near the fire and turn frequently, checking inside the foil periodically to make sure you're not charring them to bits.

  1. Preheat your oven to 400 degrees (or get your fire cranking).

  2. Poke each sweet potato with a fork a few times on each side. Cut off squares of foil large enough to more than enough encase the sweet potato and place the sweet potatoes on the foil pieces.

  3. Drizzle some olive oil over each sweet potato and roll around to coat. Sprinkle each potato with cinnamon and salt and pepper to taste (be generous). Wrap each potato up fully in the foil.

  4. Once your oven is heated or fire is ready, place the sweet potatoes in and bake for about 30 minutes, depending on how big your taters are. *Read disclaimer above for fire tips.

  5. Once your sweet potatoes are soft enough to easily pierce with a fork, they're done. If there is even the slightest amount of resistance, cook for longer. You want soft and creamy, remember?

  6. While the potatoes cool, make your tahini-butter. Combine all ingredients (butter, tahini, soy sauce, lime juice and chili powder) and taste.

  7. Unwrap each sweet potato, cut down the middle and serve with dollops of tahini-butter and a little shake of furikake seasoning, if using, and some flakey salt.
