Yummy egg and soyrizo breakfast tacos, fresh to start your morning of being a badass.
OKAY, SO YOU PROBABLY HAD THE STUFFED PASILLA PEPPERS LAST NIGHT FOR DINNER (thought so) AND NOW YOU HAVE THIS EXTRA SOYRIZO. Well, make some freakin' breakfast tacos with it.

Even if you didn't make the peppers, doesn't matter. Because the time is now and that time is taco time. Hearty enough to get you AMPED for the day, though light enough that you can still head out for your morning surf without barfing in the line up. Hope the fact that I mentioned barfing didn't kill your appetite. That's the last time I'll mention it.
BREAKFAST TACOS
Serves 2 (though, come on. Triple this recipe and make for all your friends); Cooking time: 15 minutes
Ingredients
4 eggs
half tube of soyrizo
4 tortillas (corn or flour, whatever)
1 Tbsp butter or olive oil
Salt/pepper to taste
Optional Toppings:
Shredded cheese
Avocado slices
Salsa
Other ideas: cilantro, jalapeño, diced tomato, etc.
Directions
Heat up a medium fry pan over medium/high heat.
Warm up your tortillas on the pan and put off to the side where they can stay hot & fresh.
Once the tortillas are done, lower the heat to medium and throw in your butter or olive oil.
Once the butter is melty or the oil is hot, throw in your soyrizo.
Crisp up your soyrizo for about 3-4 minutes, or until it's looking a little toasty. Reduce your heat to medium low.
Add a little more butter or oil to the pan if you need for so the eggs don't stick.
Scramble up your eggs in a bowl with some salt and pepper and add to the hot pan (or my personal favorite method: crack them into the pan as fast as I can, add in salt/pepper, and start whisking them around with my spatula like crazy. One less dish you have to wash)
Use your spatula to mix up the eggs and chorizo, scrambling them together.
Once your eggs are cooked through, turn off your stove and serve a portion of the egg/chorizo mix on top of each tortilla.
Top with cheese, avocado, salsa - or whatever else you like on your tacos. EAT.
