If you've been a little snack slut and feel like you need to wake up FRESH, then you've hit the jackpot with this meal. Born out of a peanut butter pretzel hangover, this is a healthy, crispy veggie pancake topped with goat cheese and a steamed egg, yes STEAMED. It's like the cheater version of a poached egg, without that haunting feeling that you're totally messing up brunch with your inadequate poaching technique. We've all been there.

You could also make this keto, I think? I'm no keto genius but if you axe the breadcrumbs then you're riding off into the sunset with a new little recipe in your repertoire. OR, if you want to broaden the kinds of veggies you have in here, then by all means go ahead and try it with finely chopped broccoli (why do I feel like you need to hold your pinky up while saying this), shredded carrots, etc..
Veggie Pancakes with Goat Cheese and Steamed Egg
Ingredients
Serves 2; Cook and prep time: 20 minutes
1 Large Zucchini or 2-3 small ones, grated
1/2 cup well chopped kale
1 egg
1/4 cup grated parm cheese
2 Tbsp. chopped pecans
1 Tbsp. bread crumbs
1 Tbsp. olive oil
salt and pepper
Topping: crumbled goat cheese
Topping: 2 steamed eggs (how to steam, in directions)
Directions
Spread out your grated zucchini to a plate and salt it evenly with about 1/3-1/2 teaspoon of salt (or just a light dusting of salt over all your zucchini). Let it sit 5 minutes and then press out excess moisture with paper towels.
Heat a fry pan over medium heat with your olive oil.
In a medium bowl, add your pressed zucchini, kale, egg, parm cheese, pecans, bread crumbs and mix. Add some salt and pepper to taste and mix up thoroughly.
Drop about 1/4 cup of the mixture into pan. Form into a circle, more or less, and press slightly to start frying one pancake. Continue adding more pancakes to pan if size allows.
Fry each pancake for about 3 minutes on each side, or until well toasted. You want a deep golden color. Continue until all your veg pancake mix has been cooked.
Prepare your steamed egg: I call it a cheater poach, but you could also call it a perfect fried, falls somewhere in between. Prepare a non-stick pan by placing it over medium-high heat.
Melt a little butter into the pan.
When the butter is hot and little bubbly, crack your eggs into the pan.
Once the egg whites have set a bit, around 30 seconds in, add a bit of water (~2 Tbsp.) to the pan beside the eggs and cover immediately.
Cook about 20 seconds more, or to desired doneness, and remove the eggs from the pan.
Serve up your veggie cakes on a plate and top with a bit of crumbled goat cheese and top with a steamed egg. Top your egg with a sprinkle of salt and pepper and you're all set.
